If you’ve followed me for any amount of time, you’ll know that I’ve long been a fan of Kolache Republic, from their origins at farmers markets and pop-ups to their first bakery space on South High Street (here it is in 2013 and again in 2017) to their move inside The Daily Growler a few doors up in 2020. It’s been a while since I’ve checked in with them, and they’re adding some new menu items that are worth reporting (spoiler alert: it’s cinnamon rolls!).

For those unfamiliar with Kolache Republic, they operate the small kitchen inside The Daily Growler’s German Village/Brewery District location. You’ll find them tucked off to the side with an ordering window. They produce everything from scratch in that tiny kitchen! (Which is impressive when they produce their Thanksgiving kolaches.)

They specialize in the Czech version of kolaches, a pastry with a lightly sweetened, fluffy dough that’s cut into squares and filled with mixtures of cream cheese, fruit, nuts. They typically have a sweet cream cheese flavor, but they rotate through seasonal specials, too.

Kolaches are a big deal in Texas, where the owners hail from, and in true Texas style, over the years Czech immigrants have filled the dough with sausages, kielbasa, brisket, you name it.

Kolache wraps their dough to make a mix of breakfast and lunch sandwiches. My personal favorite is their chorizo, egg, and cheese kolache. It’s so good that I put it on my list of the Best Breakfast Sandwiches in Columbus.

For lunch they feature the kielbasa and cheese or the kielbasa, cheese, and jalapeno.

It uses kielbasa made by Falter’s Fine Meats just down the road!

But their latest foray is cinnamon rolls! They’re using some of their same dough to craft a half dozen different flavors, including some standards and a few seasonal rotations. I stopped by recently to taste everything from a classic cinnamon roll to Biscoff cookies, pineapple upside down cake, lemon blueberry, and others.
If you’re a fan of cinnamon rolls, these are certainly worth checking out! Last year we participated in a cinnamon roll tasting with a group of friends, and Kolache’s entry came out in one of the top spots!

Kolache Republic is open Wednesday-Friday, 7 a.m. to 1 p.m., Saturday, 8 a.m. to 1 p.m., and Sunday, 9 a.m. to 1 p.m.
