Marinating asparagus in a red wine Dijon vinaigrette infuses every bite with layers of flavor in this easy Air Fryer Asparagus recipe!

    Air Fryer Asparagus

    Asparagus in the Air Fryer

If you’ve been making asparagus in the air fryer with just oil and salt, it’s time to take things up a notch. What happens when you marinate asparagus in a red wine Dijon vinaigrette? You get an irresistible combination of crispy edges, a tangy- sweet depth of flavor, and a perfectly tender bite—no bland spears here! They’re so good! For more inspiration, I have a whole collection of asparagus recipes, including these Air Fryer Parmesan Asparagus Fries.

    Why Air Fry Asparagus?

    Gina @ Skinnytaste.com

I love air frying asparagus. It’s one of the easiest ways to cook it since it’s hands- off. It gives you the crispy texture of roasted asparagus in a fraction of the time. But let’s be honest—sometimes, plain roasted asparagus can feel a little one- note. That’s where my quick marinade changes the game!

    • Fast: Marinate for as little as 10 minutes and still get a ton of flavor. Plus, there’s no need to preheat an oven, and the spears cook in about 8 to 9 minutes.
    • Healthy: Asparagus are packed with fiber, iron, and vitamins A, C, and K.
    • Dietary Restrictions: Weight Watchers-friendly, vegetarian, vegan, gluten-free, high-fiber, paleo, Mediterranean diet-friendly, dairy-free, low-carb, and anti-inflammatory

    Asparagus ingredients
    • Red Wine Vinegar for acidity
    • Extra Virgin Olive Oil for richness
    • Salt and Black Pepper for seasoning
    • Dijon Mustard for tanginess

How to Make Asparagus in the Air Fryer

To make this recipe even faster, make the vinaigrette and prep the asparagus a day early. See the recipe card at the bottom for printable directions.

    1. Trim Ends: Snap the woody ends of the stalks off.
    2. Make the Vinaigrette: Whisk the vinegar, oil, salt, pepper, mustard, parsley and garlic in a small bowl.
    3. Marinate the Asparagus: Coat the veggies in a large bowl with the dressing and let marinate at least 10 minutes or up to a few hours.
    4. Air fry asparagus at 400°F for 5 minutes, shake the basket, then air fry for 3 to 5 minutes for thin asparagus. Add a few more minutes for thick asparagus spears.

    Variations

    • Vinegar: You can use almost any type of vinegar. Balsamic vinegar would all be good. Lemon juice works too.
    • Herbs: Use dried parsley or substitute fresh or dried oregano, Italian seasoning, chives, or dill.
    • Parmesan: Finish with a sprinkle of parmesan cheese.

    Serving Suggestions

Air fryer asparagus pairs beautifully with grilled chicken, steak, pan-seared shrimp, fish, or salmon. Toss it into a salad, serve it with eggs for breakfast, or eat it straight from the air fryer (because let’s be real–it’s that good!).

    Helpful Tips

    • Work in batches as needed: Never crowd the air fryer basket. You want the air to circulate around the food to get crisp, browned edges.
    • Cook time will vary: This will depend on the thickness of your spears and the wattage of your air fryer.
    • No Air Fryer, No Problem: Bake 400F 10 to 15 minutes.

    Storage

    • Refrigerate leftovers for 4 days in an airtight container.
    • Reheat them in the air fryer at 360°F for 3 to 5 minutes or microwave until warm. You can also eat them cold out of the fridge in salads.
