    As if Mississippi pot roast wasn’t craveably delicious all on its own, now you have a way to use leftovers that will have you wanting to make it just so you can turn that juicy meat into sliders! These sliders combine leftover pot roast, melty provolone cheese, and the zip of banana pepper rings, all topped with a savory garlic butter sauce. Stretch your leftovers into an easy dinner.

    This recipe uses leftovers from Mississippi Pot Roast which is one of the best shredded beef recipes to ever be invented. Well, in our opinion anyway.

You can even make a whole pot roast just to turn them into sliders to feed a crowd, making them a go-to for any occasion. With the convenience of using leftovers, you can stretch your meal planning and whip up these delicious sliders without much additional effort.

    • Slider Rolls: You can use dinner rolls, potato rolls, brioche rolls, Hawaiian rolls, or anything labeled as slider rolls.
    • Provolone Cheese: We also enjoy sliced pepper jack, Monterey jack, and gouda.
    • Leftover Mississippi Pot Roast: The star of the show.
    • Banana Pepper Rings: Or use sliced pepperoncini or other similar pickled peppers.
    • Garlic Butter Sauce: Basically turns your rolls into garlic bread which is delicious.

    Use Any Leftover Shredded Beef

    If you have leftover shredded beef, you can easily transform it into Mississippi pot roast sliders. Simply mix 1 pound of shredded beef with 1 tablespoon of dry ranch seasoning and 1 teaspoon of onion powder for that classic Mississippi pot roast flavor.

    Roll Options

    You can really use any type of roll. There are so many options at the grocery store, and many of them come in a slab which is perfect for slider making. Use dinner rolls, potato rolls, Hawaiian rolls, or brioche rolls. I’ve got a famous homemade dinner roll recipe that will also be perfect.

    Stretching Leftovers

    One of the best parts about making a delicious Mississippi pot roast on a Sunday is knowing you can stretch those leftovers into another fantastic meal later in the week without it feeling like it’s “clean out the fridge night” or as we call it “scrounge night.” After enjoying your initial pot roast, store the leftovers in the fridge, and come Tuesday or Wednesday, you’ll have the perfect base for these quick and easy sliders. Leftover pot roast can be safely stored in the refrigerator for up to three days, so you have plenty of time to plan ahead.

    Freeze Leftover Shredded Beef

    For freezer meal prep, simply place the cooled shredded pot roast in a freezer bag, flatten it out to save space and make it easier to thaw later, and pop it in the freezer. When you’re ready to make the sliders, transfer the bag to the fridge to thaw the night before you want to make the sliders. If the bag is laid flat enough, your beef may thaw within 8 hours so you can pull it out the morning of.
