    This is your new go-to recipe for a quick, all-in-one meal that feels like it came from a restaurant, but is easy enough for a weeknight dinner. Whether you’re cooking for one or feeding the family, this recipe simplifies dinnertime while keeping it delicious.

    You can stick with the classic steak-and-potato combo or toss in some asparagus or broccoli for added greens. The marinade ensures tender, juicy bites of steak every time, and the potatoes turn out perfectly golden and crispy.

    Ingredient Notes

    • Steak: We suggest using sirloin steak, but you can also use tenderloin, ribeye, or strip steak. Trim off any excess fat or sinew before dicing into bite-sized pieces.
    • Lemon Juice: Freshly squeezed is best for flavor, but bottled lemon juice also works.
    • Olive Oil: You can also use avocado oil.
    • Worcestershire Sauce: If you don’t have it, soy sauce can be used.
    • Apple Cider Vinegar: Helps tenderize the steak. White vinegar or red wine vinegar are the closest substitutes.
    • Red Baby Potatoes: It’s important to use potatoes that have a thin edible skin. You can also use baby Yukon gold potatoes, diced into similar bite-sized pieces.
    • Parmesan Cheese: We like to sprinkle some on top for serving. Freshly grated melts best.

    Beef Options

    Choose the cut that best suits your taste and budget! Sirloin steak is a great option and the cheapest option too. If you can afford to indulge, beef tenderloin is luxuriously tender. Ribeye and strip steak are also excellent choices.

    Keep an eye on your cooking time to avoid overcooking and drying out the meat. For best results, trim away excess fat or sinew before marinating to ensure nobody gets a chewy piece.

    Adding Veggies

    Adding some greens to this is always a great choice. When preparing your potatoes, add 1 cup of bite-sized broccoli florets or asparagus tips. Drizzle with an extra tablespoon of olive oil or avocado oil to coat evenly. For perfectly tender-crisp asparagus, toss them separately in olive oil and add them to the air fryer during the last 4–5 minutes of cooking.

    Marinating Time

    If you’ve got the time, marinate your steak for 1 to 8 hours to really lock in those flavors and make your steak super tender. Sometimes you are in a hurry (we’ve all been there) so even 30 minutes will do the trick!

    Make ahead trick: dice and marinate your steak ahead of time, then pop it in the freezer for up to 3 months. When you’re ready to cook, let it thaw overnight in the fridge, and you’ll have perfectly seasoned steak bites good to go. Easy, right?

    Air Fryer Tips

    Use a Liner: Cleaning up is a breeze if you use air fryer parchment liners. Less scrubbing, more enjoying.

    Don’t Overcrowd: Give your food some breathing room in the air fryer basket. If your air fryer isn’t huge, cook in batches—it’s worth it for those perfectly golden results. And don’t forget to toss or shake everything halfway through so it all cooks nice and evenly.

    Keep an Eye on Things: Air fryers work fast, and nobody wants overcooked steak bites. Use a meat thermometer if you can (135°F for medium-rare, 145°F for medium) and check on things toward the end so you nail that perfect doneness.

    Storage and Reheating Instructions

    Refrigerate leftovers in an airtight container…..

    Freeze leftover portions in an airtight container or resealable plastic freezer bag. Thaw in the refrigerator overnight.

    Reheat portions in the microwave on high in 30-second increments.
