    I just got the cookbook Hot Date!, a cookbook dedicated to dates, and came across this recipe that I knew I had to make. They were so fast, easy and delicious. I keep them in the fridge and have one every night as a sweet treat. The hardest part was not eating the entire batch! I love how these also have some fiber in them.     • Mejool Dates are larger and sweeter than Deglet Noor dates. Just make sure to remove the pit first.
    • Peanut Butter: Choose a natural peanut butter with no added sugar.
    • Dark Chocolate: You can use chocolate chips or a bar. Dairy-free chocolate is also fine.

    How to Make Chocolate Covered Stuffed Dates

    This chocolate-covered date recipe is easy to double or triple if you want to make extra to have on hand when a chocolate craving hits! See the recipe card at the bottom for printable directions.

    1. Stuff the dates: Cut a vertical slit in each date and remove the pits. Put a half tablespoon of peanut butter in each one.
    2. Microwave the chocolate in a small bowl in 20-second intervals, stirring in between, until melted. You can also melt it using a double broiler–Place a heatproof bowl over a pot of simmering water, ensuring the water doesn’t touch the bowl. Add the chocolate to the bowl and stir until melted.
    3. Cover the Dates in Chocolate: Using 2 forks or chopsticks, dip the dates into the chocolate, leaving the peanut butter visible. Place on a parchment- lined sheet pan and repeat with the remaining dates. Refrigerate until the chocolate hardens.

    Variations

    • Dates: Use Deglet Noor dates. They’re smaller, so you’ll want to use more than 6. They may be harder to stuff, but they’ll still be delicious.
    • Nut Butter: Play around with different nut butters, like pistachio or almond butter.
    • Nut-Free Option: Substitute sunflower seed butter for peanut butter.
    • Dairy-Free: Use dairy-free chocolate.
    • Extra Crunch: Use a chunky peanut butter or add a roasted almond inside before stuffing with peanut butter. You could also top each one with crushed peanuts.
    • Salty Sweet: Top each date with flaky sea salt.

    Storage

    • Refrigerate the stuffed dates for 5 days in an airtight container.
    • Freeze: Double or triple the recipe and store the rest in the freezer for 3 to 4 months. Let them sit at room temperature for a few minutes before eating so you don’t break a tooth! You can also thaw them in the fridge before eating.

    • Line a small baking sheet with parchment.

    • Cut the date open with a sharp knife along the edge and remove the pit. Place ½ tablespoon of peanut butter in each date.

    • Melt the chocolate in a small bowl the microwave in 20 second increments (about 1 ½ minutes total) stirring in between until the chocolate is smooth and shiny and melted, or use a double boiler.

    • Using 2 forks or chopsticks, dip the date into the chocolate and coat the whole date leaving the peanut butter visible and transfer to the parchment paper.

    • Repeat with the remaining dates and refrigerate until they firm up.
