    Gina @ Skinnytaste.com

It’s hearty without being heavy, naturally gluten-free friendly (with one easy swap), and perfect for busy weeknights when you want something warm and satisfying with minimal effort. Serve it in bowls with tortillas, over rice, or with your favorite toppings like avocado, cilantro, and a spoonful of light sour cream.

    • High in protein and low in carbs

    What You’ll Need

This Slow Cooker Green Chili Pork Stew is made with simple ingredients and big flavor—plus it’s easy to customize depending on what you have.

Slow Cooker Green Chili Pork Stew

    • Pork – You can use pork tenderloin, boneless pork loin, or pork shoulder (shoulder is the most tender, just trim excess fat before cooking).
    • All-purpose flour – Coats the pork as it browns and helps thicken the stew as it cooks. (Use a gluten-free flour blend if needed.)
    • Canned diced tomatoes with green chiles – Adds rich tomato flavor with a little extra chile heat built right in.
    • Canned green chiles – Brings that classic green chile flavor without any extra prep.
    • Jalapeño – Adds a little kick (adjust based on your spice preference).
    • Onion and garlic – The flavor base that makes everything taste slow-simmered.
    • Chicken broth – Adds body and brings it all together.
    • Spices and seasonings – Simple, cozy, and perfect for a weeknight stew.

How to Make Green Chili Pork Stew in the Slow Cooker

    brown the pork
Add everything to the slow cooker
    Slow cook until tender

This slow cooker stew is easy to throw together, but browning the pork first makes a big difference in flavor. I also coat the pork with flour as it browns, which helps thicken the stew as it cooks.

    1. Brown the pork: Heat a large skillet over medium-high heat and brown the pork until golden.
    2. Coat with flour: Sprinkle the pork with flour and stir to coat as it browns—this helps thicken the stew and gives it a better texture.
    3. Add to the slow cooker: Transfer the pork to the crock pot and add the remaining ingredients.
    4. Slow cook: Cook until the pork is tender and the flavors come together.
    5. Finish and serve: Adjust seasoning to taste, add more broth if you want it soupier, and serve with toppings like cilantro, avocado, or lime.

    Make It Your Own

This stew is super flexible depending on what you have:

    • More broth = more of a soup consistency
    • Add tomatillos for a tangier, more “green chile” vibe
    • Stir in fresh cilantro at the end for brightness
    • Want more heat? Add extra jalapeños or a pinch of chile powder

    Best Pork to Use

You have a few great options here depending on what you want:

    • Pork tenderloin – lean and cooks up tender
    • Boneless pork loin roast – also lean, slightly firmer texture
    • Pork shoulder – a little more fat, so it’ll be the most tender and juicy. If you use shoulder, just trim the excess fat before browning.

    Serving Ideas

    This is delicious:

    • With warm tortillas
    • Over brown rice or cauliflower rice
    • Topped with avocado, cilantro, and light sour cream
